Best Bean Soup (GF)
A delicious and nutritious blend of lentils, split peas, brown rice and six varieties of beans. Each 460g bag includes a spice & veggie packet and cooking suggestions. This is a customer favourite!
Ingredients: black turtle beans, pinto beans, navy beans, great northern beans, black-eyed beans, kidney beans, yellow split peas, green split peas, red lentils, green lentils, short grain brown rice, spice packet (dried vegetables, onions, garlic)
Recipe:
• 2 cups Best Bean Blend (1 package)
• 10 cups Water
• 1 lb Diced Ham, cooked (Optional) or any other leftover cooked meat
• Spice & Veggie Packet (included)
• 1 - 28 oz can of diced tomatoes or fresh tomatoes, chopped
• Salt & Pepper to Taste
• Hot Peppers (Optional)
Optional garnishes: grated cheese, a dollop of sour cream, fresh chives.
Instructions:
In a large pot, cover beans with water and soak overnight OR bring to a boil for 10 minutes. To reduce the "musical effects", drain all of this first water and replace with 10 cups of fresh water.
Bring back to a boil for 10 minutes, reduce heat & simmer for 45 minutes.
Add spice & veggie packet and meat (if using). Simmer for 45 more minutes.
Add the tomatoes (& optional hot peppers). Simmer for 30 minutes more.
Serve with raw veggies and whole grain bread.
